Thai chicken noodle salad

300g pack essential Waitrose Rice Noodles
70g pack essential Waitrose British Wafer Thin Roast Chicken, shredded
½ bunch essential Waitrose Salad Onions, sliced
1 essential Waitrose Carrot, grated
2 tsp Thai fish sauce
1 tbsp essential Waitrose White Wine Vinegar
2 tbsp sweet chilli sauce
25g unsalted peanuts, chopped
1. Microwave the noodles for 3 minutes according to pack instructions. Allow them to cool slightly. Mix in the chicken, salad onions and carrot.
2. Whisk together the fish sauce, vinegar and chilli sauce and toss into the salad.
3. Sprinkle over the peanuts and serve straight away.
