    Thai Fresh Prawn Soup with Red Chilli Croutons

    Serves: 2

    Ingredients

    • ½ x 350g jar Sharwood's Singapore Laksa
    • 4 salad onions
    • 100g carrots
    • 1 dash oil
    • 100g shelled tiger prawns

    Method

    1. Halve 100g shelled tiger prawns lengthways. Heat a little oil and stir-fry the prawns briefly with 100g carrots, cut into matchsticks, and 4 salad onions, shredded.
    2. Add ½ x 350g jar Sharwood's Singapore Laksa and the same amount of water (about 200ml). Bring to the boil and simmer for 2-3 minutes until the prawns are thoroughly cooked.
    3. Serve this in bowls as a soup. Top it with small cubes of white bread, fried in a mixture of groundnut and sesame oils and a little chopped red chilli.
