    Thai Spiced Turkey

    Healthy alternative

    Serves: 4

    Ingredients

    • Salt and pepper
    • A bunch of salad onions, thinly sliced
    • 1 tbsp vegetable oil
    • 500g pack Waitrose Fresh British Turkey Breast Mince
    • 1 red pepper
    • 3-4 tsp Bart Spices Thai Red Curry Paste
    • 3 tbsp soy sauce
    • 250g pack beansprouts
    • A few leaves of iceberg lettuce

    Method

    1. Heat 1 tbsp vegetable oil in a large pan or wok, add a 500g pack Waitrose Fresh British Turkey Breast Mince and fry quickly, stirring, until the juices run clear and there is no pink meat. Add a deseeded and chopped red pepper and cook for 5 minutes, stirring occasionally.
    2. Stir in 3-4 tsp Bart Spices Thai Red Curry Paste, 3 tbsp soy sauce, a 250g pack beansprouts, a bunch of thinly sliced salad onions, and season with salt and pepper. Stir well, cover and cook for 3-4 minutes. Put a couple of large iceberg lettuce leaves on each plate and spoon the turkey over the leaves. Serve hot with boiled long grain rice.
