    Thai-Style Pork Meatballs With Cucumber And Chilli Salad

    • Total time: Ready in 20 minutes 20 minutes

    Ingredients

    • Rice or noodles, to serve
    • 1 tbsp Blue Dragon Sweet Chilli Dipping Sauce
    • ¼ finely sliced red onion
    • ½ cucumber, deseeded, halved and sliced
    • Meatballs
    • ½ x 20g pack fresh coriander
    • 2 tbsp Blue Dragon Sweet Chilli Dipping Sauce
    • 300g pack of 20 Organic Pork Meatballs

    Method

    1. Finely chop ½ x 20g pack fresh coriander and mix in a roasting tin with 2 tbsp Blue Dragon Sweet Chilli Dipping Sauce. Toss a 300g pack 20 Organic Pork Meatballs in the mixture until well coated.
    2. Bake in a preheated oven at 180°C, gas mark 4 for 15-20 minutes or until cooked through and there is no pink meat remaining.
    3. Meanwhile, chop the rest of the coriander and mix with ½ cucumber, deseeded, halved and sliced, ¼ finely sliced red onion and 1 tbsp Blue Dragon Sweet Chilli Dipping Sauce. Serve the meatballs and salad with rice or noodles.
