    The Aussie Burger

    The Aussie burger is quite the institution in its homeland. Serve it with a regular bun, or, an idea from the States, on a sweet brioche bun – it’s a play on fast-food sweet rolls.

    • Preparation time: 20 minutes
    • Cooking time: 15 minutes
    • Total time: 35 minutes 35 minutes

    Serves: 4


    • 500g Lean beef mince
    • 1 Small red onion
    • 3 tbsp Olive oil
    • 4 slices Cored pineapple
    • 4 Hamburger buns, split
    • 4 Eggs
    • 2 Cooked beetroot, sliced
    • 2 Tomatoes, sliced


    1. Put the mince and onion in a bowl, season with sea salt and black pepper, and combine. Form into 4 patties.
    2. Heat 2 tbsp oil in a non-stick frying pan over a medium-to-high heat. Add the patties and, because they tend to puff up, make a dip in the centre of each with the back of a spoon. Cook for 4 minutes on each side. Remove and keep warm.
    3. While the burgers are cooking, heat a griddle pan or grill and cook the pineapple slices until slightly charred on both sides. Griddle or grill the cut sides of the buns. Fry the eggs in the remaining oil until the edges are crispy but the yolks still runny. Serve each burger in a toasted bun with pineapple, lettuce, beetroot, tomato and a fried egg.
