    The Banana Pancake of Comfort


    • 1 egg
    • 4 tbsp plain flour
    • 7 tbsp milk
    • 1/2 tsp ground cinnamon
    • 1 tsp caster sugar
    • 1 banana
    • 1 tsp dark brown sugar
    • Orange juice and zest


    1. Make a pancake batter by mixing 1 egg with 4 tbsp plain flour and 7 tbsp milk. Whisk until it's smooth, adding more milk if you need to (the batter should be slightly thicker than single cream). Stir in ½ tsp ground cinnamon and 1 tsp caster sugar.
    2. Heat a frying pan over a medium heat with a knob of butter. When the pan is hot and the butter sizzling, ladle some of the pancake mixture into the pan and swirl around so it evenly covers the bottom to a depth of about 3mm. Immediately turn the heat right down and cover half the pancake with a thinly sliced banana. Sprinkle 1 tsp dark brown sugar over the banana along with a further dusting of ground cinnamon.
    3. When the top of the pancake looks just about set, squeeze over the juice of half an orange, fold the pancake over and leave in the pan a little longer until the sugar has melted and the banana is hot. Remove from the pan and serve with a further squeeze of orange juice and a few strands of orange zest. This makes enough batter for 4 pancakes.
