    The Chip Butty of Virtue


    • 1 baking potato
    • A little olive oil
    • 1 pinch dried oregano
    • 1/2 tsp ground paprika
    • 2 halved tomatoes
    • Slices of wholemeal bread


    1. Cut a baking potato into 8 wedges. Mix a little olive oil with a good pinch of dried oregano and ½ tsp ground paprika. Season. Toss the wedges in the mixture.
    2. Bake for 25-30 minutes at 200°C, gas mark 6. After 10-15 minutes, put 2 halved tomatoes, seasoned and drizzled with oil, into the oven in another dish.
    3. Sandwich the chips and tomatoes between slices of wholemeal bread and rejoice in this twist on a guilty favourite.
