    The Frittata of Perpetual Recovery

    Artichokes enhance liver function and eggs are rich in the amino acid cysteine, which is thought to be good at cleaning out toxins.

    Serves: 4 - 6


    • 4 new potatoes
    • 2 tbsp olive oil
    • 180g pack char-grilled artichokes
    • Chives
    • 6 eggs


    1. Slice 4 new potatoes into 4mm-thick rounds and place in a small frying pan with a knob of butter and 2 tsp olive oil. Cook over a low heat until the potatoes are soft. (Alternatively, use a pack of par-cooked new potatoes and cut into chunks).
    2. Roughly slice a 180g pack char-grilled artichokes on top of the potatoes, add some snipped chives, then pour over 6 beaten, seasoned eggs and cook until the top has almost set.
    3. Shove under the grill to finish cooking, then serve in wedges.
