    The Salads of Mercy

    • Vegetarian


    • Broccoli and Tomato
    • ½ clove garlic
    • Sea Salt
    • 1 tbsp red wine vinegar
    • 2 tbsp olive oil
    • 1 pinch pepper
    • 6 cherry tomatoes
    • ½ head broccoli
    • A few sunflower seeds
    • Watercress with Avocado
    • A little olive oil
    • 1 avocado
    • Lemon Juice
    • Watercress


    1. Broccoli and Tomato: For an antioxidant-packed snack, crush half a clove of garlic with some sea salt then add 1 tbsp red wine vinegar, 2 tbsp olive oil and some pepper. Add 6 halved cherry tomatoes and half a head of broccoli, cut into florets. Stir together and sprinkle on a few sunflower seeds to finish.
    2. Watercress with Avocado: If you spent the previous night in a smoky pub, try watercress. It's rich in isothiocyanate, which may reduce the effects of one of the carcinogenic agents in tobacco smoke. Halve, stone and peel an avocado and cut into chunks. Sprinkle with lemon juice and stir to coat. Add a little olive oil, then season, scatter on to a bowl of watercress, and eat.
