    Toasted Pear and Beaufort Sandwich

    • Preparation time: 10 minutes
    • Cooking time: 4 minutes to 6 minutes

    Serves: 2


    • 6 Streaky bacon rashers
    • 1 tbsp Maple syrup
    • 20g Butter, softened
    • 4 slices Wholemeal or sourdough bread
    • 1 Ripe pear, cored and finely sliced
    • 1 tbsp Thyme leaves, ideally lemon thyme
    • 50g Beaufort cheese, very thinly sliced


    1. Grill the bacon until almost crispy; brush with maple syrup, grind over black pepper and grill for 2 minutes more, to caramelise.
    2. Butter the bread and place 2 slices on a chopping board, buttered sides down. Top the unbuttered sides with the bacon, pear, thyme and cheese, then the other 2 bread slices, buttered sides up.
    3. Place a griddle pan over a medium heat. Griddle the sandwiches for 2–3 minutes on each side, until golden. Turn down the heat if the bread browns too quickly – the cheese should properly melt.
    4. Cut in half on the diagonal and serve warm.
