    Toffee Fruits


    • 115g Waitrose Superfine Plain Flour
    • Pinch of salt
    • 1 egg
    • 75ml water
    • 75ml milk
    • Vegetable oil
    • Bananas
    • Apples
    • 175g granulated white sugar
    • 1tbsp toasted sesame seeds


    1. Place 115g Waitrose Superfine Plain Flour, sifted; pinch of salt; 1 medium egg, lightly beaten; 150ml water and milk mixed in equal parts, in a liquidiser or food processor and blend until fully combined.
    2. Heat some vegetable oil in a deep fat fryer to chip-frying temperature. If you don't have a deep fat fryer, fill a wok one-third full with oil.
    3. Dip bite sized pieces of bananas and peeled eating apples into the batter then deep-fry in batches for about 6-8 minutes until golden brown and crispy. Remove from the fat, drain on kitchen paper and keep warm.
    4. To make the toffee, bring 175ml water to the boil, carefully add 2tbsp vegetable oil and 175g granulated white sugar and continue to boil, stirring well until it thickens, turns pale caramel colour and runs off the spoon slowly.
    5. Prepare a bowl of iced water. Dip the fried fruit pieces into the toffee and 1tbsp toasted sesame seeds, then dip into the iced water to harden the toffee.
