    Tofu and Mushrooms in a Fragrant Lemon Grass Broth

    Serves: 4

    Ingredients

    • 1 litre vegetable stock
    • 2 lightly crushed lemon grass stems
    • 1 chopped red chillies
    • 2 tsp tamari sauce
    • 200g chopped shiitake mushrooms
    • 250g cubed silked firm tofu
    • 1/2 lime
    • 1 handful fresh basil leaves
    • 2 salad onions

    Method

    1. Bring 1 litre vegetable stock to the boil in a saucepan, add 2 lightly crushed stems lemon grass and 1 chopped red chilli. Simmer, covered, for 15-20 minutes.
    2. Add 2 tsp tamari sauce and ground white pepper to taste. Add 200g chopped shiitake mushrooms and 250g cubed silken firm tofu, and cook for 5-10 minutes.
    3. Add the juice of 1/2 lime, a handful of fresh basil leaves and 2 salad onions, sliced lengthways. Stir, remove the lemon grass, divide between 4 bowls and serve hot.
