    Tomato, Herb and Goats Cheese Tarts

    Serves: 4

    Ingredients

    • 250g puff pastry
    • 1 tbsp Waitrose Red Pesto
    • 2 x 100g Organic Welsh Goat's Cheese
    • 3 tbsp chopped parsley
    • 3 tbsp chopped chives
    • 300g organic cherry tomatoes

    Method

    1. Roll out 250g puff pastry and cut into four 15cm rounds. Place on a large damp baking sheet and with a sharp knife, gently score around each 1cm from the edge.
    2. Spread 1 tbsp Waitrose Red Pesto over each tart to the scored line. Mix 2 x 100g packs Organic Welsh Goat's Cheese and 3 tbsp each chopped parsley and chives, season and sprinkle over tarts. Scatter 300g organic cherry tomatoes on top, drizzle with olive oil and bake in a preheated oven at 200°C, gas mark 6, for 15 minutes.
