    Tomato and Feta Salad

    • Preparation time: 10 minutes
    • Total time: 10 minutes 10 minutes

    Serves: Serves 6-8 as a starter

    Ingredients

    • 1kg tomatoes (different sizes and colours if possible)
    • 150g feta cheese
    • 2 packs basil leaves
    • 36 black and green olives
    • Salt
    • Freshly ground black pepper
    • 6 tbsp olive oil
    • 3 tbsp aged balsamic vinegar

    Method

    1. Slice the tomatoes into discs about 5mm thick, discarding the top and tail. Also discard slices with any of the hard, white core in. Fan the tomatoes out on a platter.
    2. Crumble the Feta. Tear the basil leaves. Sprinkle both of these over the tomatoes, along with the olives, and season well with salt and pepper. Drizzle the olive oil and balsamic vinegar over the top and serve straight away.
