    Tomato Relish

    • Preparation time: 15 minutes, plus overnight chilling
    • Cooking time: 90 minutes
    • Total time: 1 hour 45 minutes plus overnight chilling

    Serves: 6

    Ingredients

    • 15g salt
    • 750g ripe tomatoes, cut into large chunks
    • 2 large onions, peeled and sliced
    • 250g soft brown sugar
    • 1 ½ red chillies, finely sliced
    • 250ml cider vinegar
    • 1 tbsp plain flour
    • 1 tbsp curry powder
    • 2 tsp wholegrain mustard
    • 3 tbsp chopped basil

    Method

    1. Stir the salt into the tomatoes and onions, cover and leave overnight. The next day, pour off the juice.
    2. Put the tomatoes and onions in a large preserving pan with the sugar, chillies and enough vinegar to cover. Bring to the boil and simmer gently for 1 1/2 hours.
    3. Mix the flour, curry powder and mustard to a paste with a little more vinegar. Add to the tomatoes with the basil. Boil for 5 minutes. Pour into hot, sterilised jars and seal. Serve cold.
