Tomato Sausages and Mash

Ingredients

1 tbsp olive oil

1/2 an onion

1 garlic clove

8 Waitrose Hampshire Breed Pork, Apple, Honey and Rosemary Chipolatas

200g cherry tomatoes
-
200g Waitrose Peas, Leeks and Spinach Medley

Mashed Potato, to serve
Method

In a non-stick frying pan, heat 1 tbsp olive oil. Gently cook ½ onion, finely sliced, and 1 clove garlic, crushed, for 2-3 minutes until starting to soften.

Take 8 Waitrose Hampshire Breed Pork, Apple, Honey and Rosemary Chipolatas (from the meat service counter), twist each of them in half, then cut and add to the pan. Continue to fry with the onions for 5-8 minutes, until the sausages are golden.

Stir in 200g cherry tomatoes, halved, to the pan and continue cooking for 4-5 minutes, until the sausages are completely cooked and the tomatoes are very soft and gooey.

Serve with mashed potatoes and a 200g pack Waitrose Peas, Leeks & Spinach Medley, cooked according to the pack instructions.
