    Serves: 4

    • 250ml water
    • Pinch of salt
    • 85g jumbo oats
    • 2 tbsp single cream
    • 2 tsp ground cinnamon
    • 5 tbsp brown sugar
    • 1 tbsp toasted sunflower seeds
    • 2 bananas, peeled and sliced thinly
    • 300g whole milk yogurt

    1. Preheat the grill to high.
    2. Bring the water and salt to the boil in a saucepan. Stir in the oats and reduce the heat to low. Stir for 3-5 minutes or until the oats absorb the water and thicken. Stir in the cream, cinnamon, 1 tbsp of the brown sugar and the sunflower seeds. Divide between four ramekins. Top the oats with a layer of sliced banana, then top each ramekin with 75g yogurt.
    3. Sprinkle 1 tbsp brown sugar over each ramekin, in an even layer. Put the ramekins on a baking tray and place under the grill for 1 minute or until the sugar is caramelised. Serve warm or refrigerate overnight and serve cold.
