    Tropical Organic Christmas Cake

    Made with pale golden organic sugar and organic fruits, this cake has a light colour but is still rich with all the fruit and spice flavours you would expect of a cake from the Caribbean.

    Makes: Makes: one 20cm round cake

    Ingredients

    • 2 x 500g Country Harvest Organic Mixed Fruit
    • 2tsp ground cinnamon
    • 1tsp ground cloves
    • 1tsp ground nutmeg
    • 6tbsp Rock's Organic Tropical Cordial
    • 275g Billington's Organic Sugar
    • 275g Yeo Valley Organic Butter, softened
    • 350g Waitrose Organic Plain Flour, sifted
    • 5 medium Waitrose Organic Eggs, beaten

    Method

    1. Grease and line the base and sides of a 20cm spring clip tin with greaseproof paper.
    2. Place the fruit and spices in a large bowl, pour in the cordial and mix well. Leave to soak for at least an hour, but preferably overnight. Stir occasionally.
    3. Cream together the sugar and butter until light and creamy. Gradually add the flour and eggs to the mixture, alternating to prevent the mixture from curdling. Add the fruit mixture one spoon at a time, mixing thoroughly between additions. Spoon into the prepared tin, and smooth the top of the cake with a spatula.
    4. To prevent the outside of the cake from burning before the centre is cooked, cover the outside of the tin with a double layer of brown paper which comes about 1cm above the height of the tin, and secure with string.
    5. Bake in a preheated oven 150°C, gas mark 2 for 3 1/2 - 4 hours or until a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool completely and remove from the tin.
    6. Wrap in greaseproof paper and then foil, and store in an airtight container until ready to decorate.

    Variation

    To make a more traditional cake replace the Rock's Tropical Cordial with brandy or port, then make as above.
