    Trout in Oatmeal

    Ready in 30 minutes

    Serves: 4


    • 75g Butter, 50g softened
    • 1 Salad onion, very finely chopped
    • 1 Small lemon, zest and 1 tbsp juice
    • 60g Porridge oats
    • ½ tsp Salt
    • ¾ tsp Freshly ground black pepper
    • 4 Trout fillets
    • 30ml Milk
    • 1 tsp Groundnut oil


    1. In a small bowl, mix together the softened butter, salad onion, lemon zest and juice; season. Roll into a log, wrap in clingfilm and put in the freezer.
    2. On a plate, mix the oats with the salt and pepper. Brush the fillets with the milk, dip them in the oatmeal, then put on a plate, cover with clingfilm and refrigerate for 10 minutes.
    3. Melt the remaining 25g butter and oil in a large frying pan over a medium heat. Add the fillets, skin-side down; cook on each side for 3 minutes, until the fish is cooked and coating is crisp.
    4. Cut the seasoned butter into 4 rounds and serve on top of the fish with new potatoes.
