    Tuna and Avocado Salad with Mediterranean Croutons

    This chunky main-course salad is packed with Mediterranean flavours.

    Serves: 4

    Ingredients

    • 3 Waitrose Mediterranean Ciabatta Loaf, torn into bite-sized pieces
    • 1 tbsp olive oil
    • 2 fresh tuna steaks, 150-200g each
    • 2 Little Gem lettuces, each cut into 6 wedges
    • ½ ripe avocado, sliced
    • 150g baby plum tomatoes, halved
    • 2 tbsp Waitrose Aged Balsamic and Oregano Dressing

    Method

    1. Preheat the oven to 200°C, gas mark 6. Place the ciabatta on a baking tray, drizzle with the olive oil and season. Bake for 10 minutes to make golden, crispy croutons.
    2. Meanwhile, brush the tuna lightly with oil and griddle or fry for 3-4 minutes on each side. Break into bite-sized pieces. Arrange the lettuce and avocado on 2 plates, scatter over the tomatoes, croutons and tuna pieces. Drizzle the dressing over the salad, season with black pepper and garnish with torn basil leaves.
