    Turkey Stock

    Making turkey stock will take time, but the resulting gravy makes it all worthwhile. The stock can be made the day before.

    • Preparation time: 5 minutes
    • Cooking time: 60 minutes
    • Total time: 1 hour 5 minutes 60 minutes 5 minutes


    • Reserved turkey giblets
    • 1 fresh bouquet garni
    • 2 fresh bay leaves
    • ½ onion, peeled and roughly chopped
    • 4-6 black peppercorns


    1. Place all the ingredients in a pan. Cover with 1 litre cold water and bring to the boil, then reduce the heat and simmer gently, uncovered, for about 1 hour, or until the stock has reduced by a third.
    2. Strain the stock through a sieve and reserve.
