    Turkey Stock 2

    Making your own stock from the turkey giblets is easy, and really improves the flavour of the finished gravy.

    • Preparation time: 5 minutes
    • Cooking time: 60 minutes
    • Total time: 1 hour 5 minutes 60 minutes 5 minutes

    Makes: 500ml


    • Reserved turkey giblets, from the inside of the turkey
    • 1 pack fresh bouquet garni
    • 2 bay leaves, torn in half
    • ½ onion, roughly chopped
    • 1 celery stick, roughly chopped
    • 10 black peppercorns


    1. Place all the ingredients in a pan, cover with 1 litre of cold water and bring to the boil. Reduce the heat and simmer gently for about 1 hour until the stock has reduced by half.
    2. Strain thoroughly through a sieve, reserve the stock and set aside. If making the day before, allow to cool then cover and place in the fridge.
