    Ultimate Prawn Cocktail

    This old favourite is still a great way to start the Christmas meal, and it's very quick and easy to prepare. Serve with buttered brown bread.

    Serves: 10


    • Cocktail sauce
    • 4 tbsp tomato ketchup
    • 9 tbsp mayonnaise
    • 2 tbsp Mascarpone cheese
    • Lemon juice, to taste
    • A few drops of Tabasco sauce
    • Lemon wedges, to serve
    • 800g cooked fantail prawns
    • 1 small cucumber, sliced
    • 1 iceberg lettuce, shredded finely
    • Salt and freshly ground pepper
    • Ground paprika


    1. Make the sauce by beating together all the ingredients. Set aside.
    2. Reserve 10 of the prawns for decoration, and remove the tails from all the others.
    3. Use the cucumber slices to line 10 serving glasses. Mix the lettuce with the tail-less prawns and cocktail sauce. Season and spoon the mixture evenly between the glasses.
    4. Top with the remaining prawns. Garnish with lemon wedges and a sprinkling of paprika.
