    Valentine Lamb Steaks with Avocado and Soured Cream

    Tender pieces of meat served with rich homemade sauces make meals that are simple to prepare yet impressive. Ideal for dinner parties or a special family meal, all they need as an accompaniment is a mixed salad or fresh vegetables.

    Serves: 4

    Ingredients

    • 4 Valentine lamb steaks
    • 2 peeled garlic clove
    • Salt
    • Pepper
    • 1 Hass avocado
    • 2tsp lemon juice
    • ½ tsp paprika
    • 150ml Waitrose Thick Soured Cream

    Method

    1. Rub 4 Valentine lamb steaks with a peeled garlic clove and season with salt and pepper. Either grill or cook in a lightly oiled hot frying pan for 3-4 minutes each side.
    2. To make the sauce, peel a ripe Hass avocado and purée with 2tsp lemon juice, 1 peeled clove garlic, 1/2tsp paprika, 150ml Waitrose Thick Soured Cream, and salt and pepper.
    3. Garnish with small bunches of mustard and cress.
