Vegetable spelt and rice

1 tbsp oil
300g frozen essential Waitrose Grilled Vegetable Mix
250g pack LOVElife Barley, Wheatberries, Spelt & Rice
50g essential Waitrose Lighter Mature Grated Cheese
2 tbsp essential Waitrose Half Fat Soured Cream
1. Heat the oil in a frying pan and fry the vegetables for 4-5 minutes.
2. Meanwhile, microwave the spelt and rice mix according to pack instructions and stir into the vegetables.
3. Off the heat, stir in the cheese. Serve with a spoonful of soured cream.
