Vegetable soup

This is great to use up all those left over vegetables

  • Total time: 30 mins

Serves: 4

Ingredients

  • 200g Red lentils
    Vegetable Stock
    Onions
    Carrots
    Swede
    Any of your favourite vegetables
    Serve with :
    Fresh bread and butter

Method

  1. Cook the lentils in the stock
  2. Whike the lentils are cooking add th vegetables in a pan and boil gently until tender.
  3. Mash up the cooked vegetables
  4. Add to the cooked lentils
  5. Serve with fresh bread
