    Vegetarian dipping sauce

    The ubiquitous and delicious Viatnamese dipping sauce, nuoc cham, is based on nuoc mam, the fermented fish sauce vital to the country’s cuisine. This is a vegetarian variation of the same dish.

    • Total time: 10 minutes to 15 minutes 15 minutes

    Ingredients

    • 4 tbsp Caster sugar
    • 190ml Boiled water
    • 1 Lime, juice of
    • 3 tbsp light soy sauce
    • 1 finely chopped chilli, to taste

    Method

    1. This is simplicity itself. Dissolve 4 tbsp caster sugar in 190ml boiled water.
    2. Cool and add the juice of 1 lime, 3 tbsp light soy sauce and 1 finely chopped chilli, to taste.
