    Vibrant Vinaigrette

    • Vegetarian

    Serves: Makes enough to dress a salad for 4

    Ingredients

    • 1 tablespoon Macetilla El Majuelo Sherry Vinegar
    • 4 tablespoons of the Waitrose extra virgin olive oil
    • Jar of clear honey
    • Maldon Sea Salt
    • Freshly ground black pepper
    • Salad leaves

    Method

    1. In a small jug, whisk together 1 tablespoon Macetilla El Majuelo Sherry Vinegar and 4 tablespoons of the Waitrose extra virgin olive oil of your choice. Dip a small, clean fork into a jar of clear honey so that the prongs are barely coated then stir the dressing with the fork - this will add just enough sweetness.
    2. Season to taste with Maldon Sea Salt and freshly ground black pepper - the trick is to add just enough salt to stop the dressing tasting too oily. Place your salad leaves in a wide, shallow bowl, drizzle with the dressing and toss just before serving.
