    Vietnamese Crab Noodle Salad

    • Preparation time: 10 minutes
    • Total time: Ready in 10 minutes 10 minutes

    Serves: 2

    Ingredients

    • ½ x 250g pack Sharwood’s Rice Noodles
    • 200g fresh white crab meat (or 170g tin John West White Meat Crab, drained)
    • 20g pack coriander, finely chopped
    • ½ x 20g pack mint
    • 1 lime, plus extra to serve
    • 3-4 tbsp Blue Dragon Sweet Chilli Dipping Sauce

    Method

    1. Place ½ x 250g pack Sharwood’s Rice Noodles in a bowl, cover with boiling water and set aside for 4-5 minutes. Rinse with cold water and drain thoroughly, then return to the bowl.
    2. Add 200g fresh white crab meat (or 170g tin John West White Meat Crab, drained) to the bowl, together with 20g pack coriander, finely chopped, and ½ x 20g pack mint, leaves finely chopped, the juice of 1 lime and 3-4 tbsp Blue Dragon Sweet Chilli Dipping Sauce, to taste.
    3. Toss all the ingredients together and serve with extra lime wedges to squeeze over.
