    Waitrose 1 Baked Vanilla Cheesecake with poached plums in spiced red wine

    Take a Waitrose 1 Baked Vanilla Cheesecake and top it with these seasonal ideas, for a finished dessert in minutes

    • Cooking time: 15 minutes
    • Total time: 30 minutes + cooling

    Serves: 4 - 6

    Ingredients

    150ml vegetarian red wine
    100g golden caster sugar
    1 vanilla pod, split
    2 star anise
    8 plums, halved and stoned
    645g pack Waitrose 1 Baked Vanilla Cheesecake
     

    Method

    1. Pour the red wine in a large pan with 300ml water, sugar, vanilla pod and star anise, gently heat and slowly bring to simmering point allowing the sugar to dissolve completely.

    2. Add the halved plums and bring back up to a simmer, allow the plums to gently poach for 5 minutes until softened but still holding their shape.

    3. Remove the pan from the heat and allow the plums to cool and stand. Remove the plums from the liquor, return the pan to the heat and bring to the boil to reduce to form a light syrup. Return the plums to the syrup and leave to cool completely. Remove the vanilla and star anise.

    4. Arrange some of the plums on top of the cheesecake and drizzle with the syrup. Serving the remaining plums separately.
