    Waitrose Easy to Cook Pheasant and Blackcurrant with Celeriac Mash

    Ingredients

    • 20g pack flat-leaf parsley
    • 1 lemon
    • 1 tbsp olive oil
    • 600g Waitrose Easy to Cook Pheasant Joint with a Pork, Blackcurrant and Redcurrant Stuffing
    • 1 medium celeriac
    • 400g potatoes

    Method

    1. Roast a 600g Waitrose Easy to Cook Pheasant Joint with a Pork, Blackcurrant and Redcurrant Stuffing, according to the instructions on the back of pack. Meanwhile, remove the skin of a medium celeriac and cut into chunks. Put the celeriac and 400g potatoes, peeled and chopped, in a pan of water and cook for about 15 minutes or until tender. Drain the celeriac and potato, return to the pan and mash with 20g pack flat-leaf parsley, chopped, juice of 1 lemon, 1 tbsp olive oil.
    2. Serve the pheasant, sliced, with the celeriac mash and tenderstem broccoli.
