    Walnut-dressed courgettes

    • Vegetarian
    • Preparation time: 25 minutes
    • Cooking time: 5 minutes

    Serves: 6


    • 2 tbsp Walnut oil, plus 1 tbsp extra to serve (optional)
    • 2 Cloves garlic, crushed
    • Finely grated zest of one lime, plus 1 tbsp juice
    • Several sprigs of tarragon
    • 50g Walnut pieces
    • 200g Waitrose Reduced-fat Greek Yogurt
    • 1 Salad onion, finely chopped
    • 800g (about 7) large courgettes


    1. Prepare and light the barbecue. Slice the courgettes diagonally so each slice is about 10-12cm long. (The slices need to be long so they don’t fall through the grill.)
    2. Put half the walnut oil in a pan with the garlic, lime juice, tarragon, walnut pieces and seasoning and heat gently until warmed through.
    3. Beat the lime zest with the yogurt, salad onion and a little seasoning, then spoon into a small serving dish. Drizzle with a swirl of extra walnut oil, if using.
    4. Season the remaining oil and brush over the courgettes slices. Cook over the hot coals for about 4 minutes, turning once, until lightly charred on both sides and beginning to soften. Transfer to a serving plate, spoon over the dressing and serve warm or cold with the flavoured yogurt.

    Cook's tips

    To cook indoors, brush a ridged griddle (or a large frying pan) with the oil and cook the courgettes in batches, until golden on both sides. Serve as above.
