    Warm Bacon Salad

    Serves: 4

    Ingredients

    • 1 pack of Florette Nantaise Salad
    • 1 tsp Dijon mustard
    • 2 tsp balsamic vinegar
    • 100ml Waitrose Virgin Olive Oil
    • Pinch of caster sugar
    • Salt
    • Freshly ground black pepper
    • 3 slices bread
    • 3 tbsp oil for frying
    • 1 pack unsmoked bacon lardons

    Method

    1. Arrange 1 pack of Florette Nantaise Salad on a serving dish.
    2. Make a dressing by mixing together 1tsp Dijon mustard, 2tsp balsamic vinegar, 100ml Waitrose Virgin Olive Oil, a pinch of caster sugar, salt and freshly ground black pepper.
    3. Top the salad with some homemade croutons. To make the croutons, remove the crusts from 3 slices of bread and cut the bread into cubes. Fry in 3tbsp hot oil until crisp and golden. Drain on kitchen paper and keep warm. Fry 1 pack unsmoked bacon lardons in a little extra oil, until crisp. Drain and scatter over the salad with the croutons. Pour the dressing into the frying pan, heat through and pour over the salad. Serve immediately.
