    Warm Cashew and Vegetable Salad

    • Total time: Ready in 10 minutes 10 minutes

    Serves: 4

    Ingredients

    • 200g jar Thai Taste Satay Peanut Sauce
    • 2 tbsp water
    • 2 tbsp chilli-infused oil
    • 150g Waitrose Wholesome Cashew Nuts
    • 40g Wholesome Pumpkin Seeds
    • 2 x 300g packs Sweet and Crunchy Vegetable Stir Fry

    Method

    1. Tip a 200g jar Thai Taste Satay Peanut Sauce into a small saucepan with 2 tbsp water and leave to heat gently while preparing the salad. Heat 1 tbsp chilli-infused oil in a large frying pan or wok. Add 150g Waitrose Wholesome Cashew Nuts and fry gently, stirring for 2 minutes. Add 40g Wholesome Pumpkin Seeds and fry for 1-2 minutes until they start to pop.
    2. Tip into a bowl. Add another 1 tbsp chilli oil to the pan with 2 x 300g packs Sweet and Crunchy Vegetable Stir Fry. Cook, stirring for 3-4 minutes until piping hot. Stir in 2 tbsp of the sauce and half the nuts and seeds and pile onto warmed serving plates. Scatter with the remaining nuts and seeds and serve with the remaining sauce.
