Warm ham and bean salad

500g essential Waitrose New Potatoes, thickly sliced
200g pack Waitrose Trimmed Fine Green
3 Waitrose Free Range Eggs
2 tbsp extra virgin olive oil
1 tbsp essential Waitrose White Wine Vinegar
1 tbsp essential Waitrose Wholegrain Mustard
100g pack essential Waitrose British Honey Roast Ham, shredded
100g bag essential Waitrose Mixed Salad
1. Cook the potatoes in boiling water for 10 minutes, then add the beans and cook for a further 3 minutes. Drain and return to the pan.
2. Soft boil the eggs for 4 minutes. Whisk together the oil and vinegar, season then toss half into the potatoes with the mustard, stirring gently. Then stir in the ham.
3. Place the salad on serving plates, drizzle with the remaining dressing and top with the remaining ingredients.
