    Warm Olive Salad

    • Vegetarian

    Serves: Serves 4 as an accompaniment to a selection of cooked meats


    • 2 tbsp olive oil
    • 1 red onion
    • 1 red pepper
    • 2 leeks
    • 1 tbsp lemon juice
    • 1 tbsp balsamic vinegar
    • 3 tbsp oregano
    • 125g black olives
    • Salt
    • Freshly ground black pepper


    1. Heat 2tbsp olive oil in a large frying pan then gently fry 1 red onion, halved and sliced, with 1 red pepper, deseeded and sliced, and 2 leeks, halved and sliced, for 10 minutes or until soft and lightly browned.
    2. Cool slightly before adding 1tbsp each of lemon juice and balsamic vinegar with 3tbsp oregano, roughly chopped, and 125g large black olives. Add salt and black pepper to taste. Serve with warm crusty bread.
