    Warm Squash and Beetroot Salad (for 8)

    • Waitrose Cooks Ingredients Balsamic Glaze
    • 2 x 500g pack frozen Waitrose Butternut Squash
    • 700g baby new potatoes
    • 8 medium eggs
    • 2 x 250g packs Waitrose Baby Beetroot
    • 2 x 70g pack Waitrose Lamb’s Lettuce


    1. Preheat the oven to 200°, gas mark 6.
    2. Roast the squash according to pack instructions. Meanwhile, place the potatoes in a pan of cold water. Bring to the boil and simmer for 10 minutes or until tender. Drain thoroughly.
    3. Place eggs in a pan of cold water and bring to the boil, then simmer for 3-5 minutes. Cool slightly under cold water, then peel and discard the shells.
    4. Cut the potatoes in half and place in a bowl with the squash, beetroot and lamb’s lettuce. Mix to combine. Divide between the plates and top with the eggs, cut into quarters. Drizzle over the balsamic glaze and serve immediately.
