    Watercress, lemon and caper spaghetti

    • Preparation time: 5 minutes
    • Cooking time: 12 minutes
    • Total time: 17 minutes 20 minutes

    Serves: 4


    • 400g essential Waitrose spaghetti
    • 4 tbsp essential Waitrose olive oil
    • Large pinch crushed chillies
    • 1 garlic clove, crushed
    • 2 tbsp Waitrose Cooks’ Ingredients capers, rinsed
    • 1 lemon, grated zest and juice
    • 100g bag Waitrose watercress


    1. Cook the pasta in boiling, salted water until al dente, following the instructions on the packet. Meanwhile, combine the olive oil, chilli, garlic, capers and lemon zest in a large serving bowl.
    2. Just before draining the pasta, spoon 3 tbsp cooking water into the dressing.
    3. Tip the drained pasta into the dressing, then add the lemon juice and watercress. Toss well and serve immediately.
