    Watercress and Lemon Sandwiches

    Makes: Makes enough filling for four sandwiches

    Ingredients

    • 85g pack watercress, tough stalks discarded
    • 200g cream cheese
    • Finely grated zest of 1 lemon
    • Salt
    • Freshly ground black pepper

    Method

    1. Chop the watercress in a processor. Beat in the cheese and lemon zest and season to taste. Add a squeeze of lemon juice if the mixture is stiff.
