    Watermelon Salad with Crispy Ham and Mint

    Combine sweet watermelon, crispy Parma ham and salty Parmigiano Reggiano for a light meal or starter that is refreshingly different.

    • 80g pack Waitrose Riserva Farm Assured Parma Ham
    • ½ ripe Watermelon (about 500g)
    • 50g Waitrose Parmigiano Reggiano, roughly chopped
    • 1 tsp Bart Bristol Blend Five Pepper, crushed
    • 3 tbsp Waitrose 100% Italian Extra Virgin Olive Oil
    • 2 tbsp Waitrose Red Wine Vinegar
    • ½ pack fresh mint, finely chopped, a few leaves reserved for garnish
    • Pinch of white granulated sugar


    1. Preheat the grill to high and place the ham on the grill rack and cook for 1-2 minutes until just crisp. Drain on kitchen paper and allow to cool, then break into large pieces.
    2. Cut the half watermelon in two and remove the flesh from the skin with a small sharp knife. Cut into small cubes, discarding as many of the seeds as you can. Place on a serving plate and top with the crispy ham pieces and the Parmigiano Reggiano. Sprinkle the crushed peppercorns over.
    3. Whisk together the olive oil, vinegar, chopped mint and sugar and pour over the salad.
    4. Garnished with reserved mint leaves and serve immediately with Waitrose Ready-to-Bake Scarpetta or Pane All'Olio Bread.

    Cook's tips

    Chop the mint just before serving to keep the fresh green colour. Watermelon can be used in a variety of other salads. Try it with crumbled Feta cheese dressed with a little red chilli and lime juice.
