Winter vegetable & rice jumble

1 vegetable stock cube
150g essential Waitrose Easy Cook Long Grain Rice
300g essential Waitrose Winter Vegetable Mix
50g pine nuts, toasted
2 tbsp Waitrose Apple & Walnut Chutney
1. Blend the stock cube with 500ml boiling water and add the rice. Simmer, covered for 8 minutes. Add the vegetables and cook for a further 6-7 minutes or until the water has been absorbed and the rice is tender.
2. Stir in the pine nuts and chutney and season to taste.
