    The Wiseman cocktail

    Makes: 4-6


    100ml Cointreau
    1/2 bunch lemon thyme
    1/2 bunch sage
    150ml white rum
    Dash of Angostura Bitters
    2 limes
    2 x 330ml cans San Pellegrino Sparkling Blood Orange


    1. Bring your 100ml Cointreau to a gentle simmer with 1/2 bunch of thyme and 1/2 bunch sage.

    2. Simmer for 5 minutes, cool and strain.

    3. Pour the infused Contreau, your white rum, the Angostura Bitters, the juice of both limes and the cans of San Pellegrino Sparling Blood Orange into a bowl and add ice to cool. Garnish with lime and sage to serve.
