Strawberry & watermelon jelly
These jellies, made with fresh strawberries and watermelon, are easy to make. Rich Harris shows you how.
Recipe - Serves: 6
1 mini watermelon, about 1.4kg, skin removed
600g strawberries, hulled and chopped
100ml clear apple juice
75g caster sugar
9 sheets leaf gelatine
1 tbsp lime juice
1 Cut the watermelon into chunks. Blend to a purée in a food processor then press through a fine sieve into a bowl.
2 Put the chopped strawberries in a pan with the apple juice and sugar and cook gently for 10 minutes or until the strawberries are very soft. Meanwhile, soak the gelatine in a bowl of cold water for 5 minutes to soften.
3 Press the strawberry mixture through a sieve into a small bowl. Lift the gelatine sheets out of the water and lower into the hot strawberry purée. Stir until dissolved then add to the watermelon juice with the lime juice and stir well. Pour into 6 x 250ml serving glasses.
4 Position the glasses at an angle in a muffin or roasting tin, supported by crumpled foil or newspaper. Chill for at least 6 hours until set, or for up to 24 hours. Serve topped with strawberry slices and spoonfuls of crème fraîche.
