Cod with clams and cherry tomatoes
Silvana Franco shows you a simple speedy supper that uses frozen ingredients to save you time.
Recipe - Serves: 4
1 - 2 tbsp olive oil
60g pack Cooks Ingredients Diced Chorizo
1 tsp frozen Cooks Ingredients Chopped Garlic
4 Waitrose Frozen Line Caught Cod Fillets
150ml glass of white wine
200g cherry vine tomatoes, halved
1 tsp frozen chopped Jalapeno Red Chillies
500g frozen Big & Juicy White Clams, thawed according to packet instructions
1 tbsp frozen Cooks Ingredients Chopped Basil
1. Heat a splash of olive oil in a large sauté pan and cook the chorizo and garlic for 2 minutes, add the frozen cod and cook for 2 minutes on each side.
2. Add the wine, tomatoes, chillies and clams, cover and simmer for 5 minutes until the fish is cooked through.
3. Stir in the basil and divide between four large, shallow bowls. Finish off each serving with a drizzle of olive oil and a good grinding of black pepper.
