Spiced lentil & coconut dhal
Silvana Franco shows you how to make a simple lentil dish that's bursting with flavour.
Recipe - Serves: 4
1 tbsp oil
1 onion, chopped
3 carrots, diced
1 red chilli, deseeded and finely chopped
1 tbsp medium Madras curry powder
250g LOVE Life Red Split Lentils
400ml can reduced fat coconut milk
300ml vegetable stock
100g frozen essential Waitrose Peas
50g LOVE Life Almonds, roughly chopped and toasted
28g pack fresh coriander, chopped
½ x 512g pack LOVE Life Seeded Wraps
1 Preheat the oven to 200°C, gas mark 6. Heat the oil in a large saucepan and fry the onion, carrot and chilli for 4–5 minutes.
2 Add the curry powder and lentils to the saucepan and cook for 1 minute.
3 Stir in the coconut milk and stock, cover and simmer gently for 15 minutes, stirring occasionally. Add the peas and almonds and cook for a further 5 minutes until tender. Stir in the chopped coriander and season to taste.
4 Meanwhile, heat the wraps according to pack instructions then serve with the dhal.
