Easy Tortilla pizzas

Ingredients

4 essential Waitrose tortillas
6 tbsp essential Waitrose tomato purée
6 essential Waitrose tomatoes, sliced
50g sliced black olives
1 tbsp capers
90g essential Waitrose British wafer thin honey roast ham
2 x 125g balls essential Waitrose mozzarella, drained and sliced
2 tbsp olive oil
50g wild rocket

Method

  1. Preheat the oven to 200C, gas mark 6, and put 2 large baking trays in to heat up.
  2. Lay out the tortillas and spread each one with 1 tbsp tomato purée, then layer on the slices of tomato, black olives, capers, slices of ham and mozzarella. Season and drizzle with a little of the olive oil. Put the tortilla pizzas on the preheated trays and cook for 7 to 8 minutes.
  3. Remove the pizzas from the oven, season with black pepper, then scatter over the rocket. Drizzle with the remaining olive oil and serve.
