Baked Cod with Ginger and Orange

Serves: 2

Ingredients

250-275g Select Farm Cod Fillet
Finely grated zest and juice of half an orange
1-2cm piece of ginger
Freshly ground black pepper

Method

  1. Preheat the oven to 200°C, gas mark 6. Take a 250-275g Select Farm Cod Fillet and cut into 2 pieces of about equal size. Place in a shallow ovenproof dish. Scatter the finely grated zest and juice of half an orange over the cod.
  2. Finely grate a 1-2cm piece of ginger over a plate, gather it up in your hand then squeeze the juice over the cod. Discard the pulp and season with freshly ground black pepper. Bake for 15 minutes until the cod is just opaque. Serve with egg noodles and wilted pak choi.
