Banana bread with coconut and crème fraîche

Preparation time : 20 minutes
Cooking time : 50 minutes
Total time : 1 hour 10 minutes

Serves: 10

Ingredients

110ml Sunflower oil, plus extra for greasing
200g Light muscovado sugar
2 Eggs, lightly beaten
75g Desiccated coconut
400g Mashed bananas (about 4 medium bananas)
200ml Crème fraîche
1 tsp Vanilla extract
170g Spelt flour
1 tsp Bicarbonate of soda
½ tsp Salt

Method

  1. Preheat the oven to 180°C/gas 4. Grease a small (1kg) loaf tin with oil and line the base with non-stick baking paper.
  2. Beat together the oil and sugar. Add the eggs, coconut, mashed bananas, crème fraîche and vanilla extract. Gently sift in the flour, bicarbonate of soda and salt, stirring until the dry ingredients are moistened by the wet.
  3. Pour into the prepared tin and bake for about 50 minutes, until risen and golden. A skewer inserted into the centre should come out clean.
  4. Serve slices warm with a handsome dollop of butter
