Banoffee Pie 2

Preparation time : 4 hours for the toffee, then 15 minutes, plus chilling
Total time : 4 hours 45 minutes

Serves: 4

Ingredients

Dark chocolate, to decorate
400g tin condensed milk
150g digestive biscuits
75g butter
3 large bananas
284ml carton double cream

Method

  1. Put the can of milk, unopened, in a large pan, cover with water, bring to the boil and boil for 4 hours, topping up with boiling water from the kettle as needed. Remove and leave to cool.
  2. Put the digestives in a clean plastic bag and crush with a rolling pin. Melt the butter in a small pan, add the biscuits, mix, and press into the base of a 20cm flan tin. Chill in the fridge for 30 minutes.
  3. Open the can of condensed milk, which will have turned to toffee. Spread this over the biscuit layer. Peel and thinly slice the bananas, and arrange in a layer over the toffee. Finally, whip the cream until thick and spread over the bananas. Decorate with grated dark chocolate, if you like.

If you're short for time, you can substitute the toffee sauce for butterscotch angel delight. Always a winner with the kids!

Absolutely delicious - but it serves 8 people not 4! Also I agree that to boil condensed milk for 4 hours is a waste of time -- I used a jar of Dulce de Leche - and it was fab!

Really good simple recipe! Although I cut down 4 hours of prep time..by being lazy and buying a tin of Nestle's caramel. It still tastes yummy and is great if you're in a hurry (only took less than 20 mins to make plus time to chill) I've added a little pic..next time i'll prob make it a bit longer in depth!

not bad although i followed debs advice and instead of boiling in hot water I heated the condensed milk in saucepan. However, I must have left it too long coz it was quite stiff by the end!

Since this recipe is so delicious, I boil two or three cans of milk at once - it seems to keep forever. Alternatively, you can now buy the condensed milk already boiled, but I don't think it's quite as nice as home-boiled!

The problem here is 4 hours boiling the condensed milk. It is a waste of energy....Much better way is to add 3 and a 1/2 ounces of soft dark brown and 3 and a 1/2 ounces of butter to a non stick pan, melt these 2 together then add the condensed milk and bring to the boil whilst stiring. When thickened pour over the base and refrigerate untill set. Perfect every time!

I made this last week and am now having to make it again for the weekend. It really works and is a winner in our household. Watch out though as you may have to make it weekly!

This is too good and i have been told not to make it too often as it just gets eaten!!!
