Barbecued Squid

This is perfect for small or medium-sized squid, but not suitable for those over 15cm long. If you want to serve more than 8 people, just allow 2-3 cleaned squid per person.

Preparation time : 15 minutes
Cooking time : 5 minutes
Total time : 20 minutes

Serves: 8

Ingredients

600-700g cleaned squid
Sea salt and freshly ground black pepper
2 lemons

Method

  1. Slice off the squid tentacles and set aside. Make a slit up the side of each squid body so they can be opened out and laid flat. If you have any very small squid, leave them whole.
  2. When the barbecue is really hot and the coals are no longer smoking, place the squid bodies and tentacles on it without any oil or seasoning. As soon as the flesh turns from translucent to opaque and begins to char, turn the squid over and sear the other side. The whole operation should only take 2-3 minutes. Remove from the grill, sprinkle with salt and pepper, douse liberally with lemon juice and serve.
